*Thyme Infused Simple Syrup

Steep the thyme sprigs in very hot (but not boiling) water for about 10 minutes, then gently muddle them, by pressing them repeatedly with a cocktail muddler or any kitchen utensil with a flat end on the handle. Strain out the thyme leaves, and stir in the sugar until it is fully dissolved. Let cool before placing in glass bottle. Refrigerated, your syrup will be good for up to 2 weeks.
